How to make a basic batch of smoked turkey legs

So the wife and kids are getting sick of ribs and the grocery store was having a sale on turkey legs. It’s fair season and this is always one of my favorite fair foods.  I’m trying a brown sugar based rub hoping I don’t burn it. The biggest thing with these are using a brine first. Soak your turkey legs in this overnight:

  • 1 gallon of water
  • 1 cup kosher salt
  • 1 cup brown sugar
  • 2 tablespoons each: Cumin, whatever rub you will be using, red pepper flakes, onion powder, garlic powder.

Soak a good 12 hours then rinse and apply your rub and let set for about an hour.
Mean while get the smoker up to 250-275 and smoke those turkey legs. Once they get to 165 internal, they are done. As long as your smoker holds temperatures it should take 2 to 2.5 hours.

Now add some of your BBQ sauce and wrap in foil then back on LOW heat, about 150 for 20-30 minutes to rest and cook that sauce on.

The brine really gets into the meat and the smoky flavor runs all the way through to the bone. Grab your eatin’ shirt and enjoy!
