Winter is here! This great mildly spicy popper soup is a robust creamy spin on tomato soup perfect with grilled cheese sandwiches!
Ingredients:
2 tablespoons olive oil or butter
1 small onion, diced
2 cloves garlic, minced
2 small or 1 large fresh jalapeños, seeded and diced (one more sliced for garnish)
1 can (28 oz) crushed tomatoes
2 cups vegetable (or chicken) broth
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon salt
1 Tablespoon black pepper
1 cup heavy cream
4 ounces cream cheese, softened
1 cup shredded sharp cheddar cheese
1/2 cup bacon crumbles (plus some more for garnish)
2 tablespoon fresh or dried cilantro garnish
Step 1: Sauté onion, garlic and jalapeno oil or butter until onions are translucent and aromatic. 3-5 minutes
Step 2: Add broth, can of tomatoes and dry spices. Simmer 15-20 minutes but 5-10 will do in a rush.
Step 3: Blend base with a little immersion blender or transfer to a big blender and blend until pureed and smooth.
Step 4: Reduce heat to low and Fold in the cheeses and heavy cream. Mix until creamy.
Step 5: Taste test and season as desired. Serve in bowl with cheese, bacon and jalapeno slices as desired
